I'm Rachel

Founder, baker and lifelong rule breaker in the kitchen. Allergies hit our family hard, mine and my daughter’s, and the options out there were bland or risky. So I didn’t tweak a recipe. I tore up the rulebook. I signed the lease on a 2,000 m² industrial unit in Ayrshire and built a dedicated allergen-free bakery from scratch. No big investors. No shortcuts. Just a clear goal: cookies that include everyone and taste unreal.

We passed our SALSA audit, put rigorous systems behind the rebel flavour, and started supplying frozen cookie pucks to operators across the UK. I’m now the Scottish Ambassador for the British Business Bank’s Start Up Loans programme, proof that backing belief matters. This bakery is what happens when you refuse to play small.

How we stay allergen safe

  • Dedicated site: none of the 14 major allergens come through the door. We don’t “manage” allergens - we remove the risk entirely.
  • Controlled suppliers, strict checks and structured paperwork. Documented HACCP, full traceability and verification at every step.
  • Capacity up to 10,000 cookies a day, with care for every tray. Frozen format keeps it consistent, safe and easy for foodservice.
